Gluten Free Broccoli & Potato Frittata
150g / 5.3oz Cooked cubed potatoes
100g / 3.5oz Roughly chopped broccoli florets
1 tablespoon / 0.51 fl oz olive oil
75g / 2.6oz chopped onion
½ teaspoon / 0.01042 cup Dried Oregano
½ teaspoon /0.01042 Dried Rosemary
3/4 teaspoons / 0.01562 cup sea salt
¼ teaspoons / 0.00521 cup black pepper
60ml / 2.0288 fl oz milk
1 x 225g / 7.9oz Mr Crumb Gluten Free Sage & Onion stuffing
Add the oil to a frying pan and heat. Add the cooked potatoes and Onion, fry for 3-4 minutes, add the Broccoli and fry for a further 1 minute. Set aside to cool.
In a bowl add the eggs and milk and whisk until evenly mixed. Add the herbs, salt & pepper and the cooked Potato mix. Stir until even distributed. Pour into a non stick oven proof dish and sprinkle the top with Mr Crumb Gluten Free Sage & Onion Stuffing.
Preheat the oven to 190⁰C/ 375⁰F / Fan 180⁰C/ Fan 350⁰F / Gas Mark 5
Place the dish in the centre of the oven and bake for 20-25 minutes or until golden brown. Remove for the oven and allow to stand for 2 minutes before serving.
