Chicken and Ham Croquettes

Serves 4-6

150g Mr Crumb Breadcrumbs

250g mashed potato

1 tbsp fresh parsley, chopped

4 eggs

100g leftover chicken, chopped

100g leftover ham, chopped

50g flour

Black pepper

Oil, for frying

To serve:

Mayonnaise / Chutney / Chilli Sauce – Whatever you fancy!

Method

1 Combine the mashed potato with the parsley, two beaten eggs, chicken and ham. Mix gently to combine and season with pepper.

2 Place the flour, remaining beaten eggs and breadcrumbs into three separate bowls.

3 Use a tablespoon to scoop the croquette mixture and, using floured hands, roll it into balls or cylinder shapes.

4 Roll each croquette in flour, then dip into the eggs and coat in the breadcrumbs.

5 Arrange the finished croquettes in a single layer on a tray or plate lined with kitchen paper, then place in the refrigerator.

6 Heat the oil in a frying pan over a medium-high heat or in a deep fat fryer.

7 Fry the croquettes in small batches to keep the oil temperature constant. Lift out when golden brown and drain on kitchen paper. Serve hot with a salad and your favourite dipping sauce!
