Goat cheese, cranberry & walnut en croute recipe

Ingredients

1 pack ready rolled puff pastry – 2 sheets

200g goat cheese (4x 2cm slices from a log)

50g Mr Crumb Breadcrumbs

50g chopped walnuts

50g butter

1 small red onion finely chopped

4tsp Cranberry Sauce (or any sauce you love)

1 egg beaten

A little flour

1tbs chopped fresh herbs (parsley, thyme or sage)

salt and pepper

Method

Melt the butter and add the onion cook for 1 minute and add the breadcrumbs, walnuts, herbs, and mix well. Taste the mix and season with salt and pepper, if necessary.

Lay the sheets of pastry on a floured work surface and cut each sheet into 4 saucer-sized circles.

Place a slice of goat cheese in the center of 4 pastry circles. Spread 1tsp of the cranberry on each piece of the goat cheese and top with the walnut crumb mix, leaving 1cm of the pastry clear around the edge.

Brush around the edge of the pastry with the beaten egg. Cover the goat cheese and crumb with a second circle of pastry and crimp the edges together using a fork to form a parcel.

Brush the top with beaten egg. Prick the top of the parcels with a fork and place on a parchment lined or lightly oiled baking sheet.

Bake in a 180C oven for 20 minutes until golden brown.

Serve with some green salad.
