Baked salmon with dill crumb crust

Serves 6-8

1 side of salmon, boned, skin on (approx. 1kg)

100g MrCrumb Breadcrumbs

grated zest of 1 lemon

1tsp black pepper

1tsp salt

1 tablespoon of olive oil

1 tablespoon of dill chopped

To serve - Wedges of lemon, 4tbs mayonnaise, Dill

1 Lay the side of salmon, skin side down, on a well-oiled foil sheet on a baking tray

2 Season the flesh of the fish with the salt and pepper

3 Combine the breadcrumbs with the grated lemon zest, chopped dill and olive oil.

4 Spread the crumb mixture carefully on top of the salmon

5 Bake in the oven at 170C for about 20-30 minutes. Until the crumb is crispy and the salmon cooked through.

6 In a small bowl mix the mayonnaise with the juice of half a lemon and 1tsp of chopped dill. Serve alongside the baked salmon with some more lemon wedges.

7 Some nice seasonal accompaniments for this dish are boiled baby potatoes and asparagus or fine green beans.
